These stuffed pitas are exploding with flavor. At only 270 calories per serving, Asian Ginger BBQ Shrimp Stuffed Pitas are a healthy dinner that can be on your families plate in under 30 mins. For a reduced carb version, use lettuce instead of pitas and cauliflower rice instead of standard rice.
Spicy and slightly sweet Asian Ginger BBQ Shrimp Stuffed Pitas is loaded with sauteed veggies and shrimp. I use onions, peppers and mushrooms, but this recipe works great with broccoli, squash, snap peas or any combination of stir-fry veggies you prefer. If you are not into heat, removing the jalapenos will make it more “family friendly”.
I used about 3/4 cup of Just Enough Heat’s Asian Ginger BBQ Sauce which gives the Asian Ginger BBQ Shrimp Stuffed Pitas a unique and wonderful flavor. You can adjust this amount, to taste, if you desire a more subtle flavor.
ASIAN GINGER BBQ SHRIMP STUFFED PITAS:

– 1 T olive oil
– 1 med sweet onion, sliced
– 2 bell peppers, sliced
– 8 oz mushrooms, sliced
– 1 jalapeno pepper, sliced (optional)
– 12 oz raw shrimp, shelled & cleaned
– 2 cloves garlic, minced
– 3/4 cup Asian Ginger BBQ Sauce
– 4 whole wheat pitas cut in half
– 2 cups cooked rice, brown or white
– Soy sauce & more Asian Ginger BBQ sauce
ASIAN GINGER BBQ SHRIMP STUFFED PITAS DIRECTIONS:
In large non-stick skillet or wok, heat olive oil on medium-high heat. Add veggie and saute for about 10 mins. Add shrimp and cook 5 more mins. Finally, add Asian Ginger BBQ sauce and cook until shrimp is thoroughly cooked and veggies are tender, about 5 mins. Remove skillet from heat. Open the pocket of a pita half and add 1/4 cup rice and 1/8 of stir-fry mixture. Repeat with remaining pitas, then top pitas with soy sauce and/or more BBQ sauce.
